FRIED RICE Ingredients : Uncooked or Long Grain White Rice - 1 Cup Water - 2 Cups Vegetable Oil - 2 Tablespoons Onion - 1/4 Cup (Minced) Garlic - 1 Tablespoon (Minced) Carrots - 1/2 Cup (Diced) Oil - 1 Teaspoon Large Eggs - 2 (Beaten) Peas - 1 Cup Soy Sauce - 1 Tablespoon Salt - 1/4 Teaspoon Pepper - 1/8 Teaspoon Green Onions - 2 Tablespoons (Sliced)                           Instructions: Cook the Rice Step 1: Add uncooked rice to a fine-mesh strainer. Rinse and wash under running cool water until it runs clear, scrubbing the rice in between your hands several times, about 1 minute. Shake and lightly press to drain. Step 2: In a medium pot, add rice and 2 cups of water. Bring to a boil over medium-high heat, stirring a few times. Cover and reduce to low heat and simmer. Chicken Biriyani

CHICKEN BIRIYANI Ingredients: Yogurt - 3 Tablespoon Ginger Garlic Paste - 1 and 1/4 Tablespoon Garam Masala or Biryani Masala - 1/2 to 1 Tablespoon Salt - 1/2 Teaspoon Ground Turmeric - 1/4 Teaspoon   Red Chili Powder - 1/2 to 1 Teaspoon Lemon Juice - 1 Tablespoon (Optional) Instructions:     Step 1:      Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. You can also rest it overnight in the fridge.      Step 2:          Meanwhile add 2 cups basmati rice to large pot and rinse it at least thrice. Drain to a colander after 30 mins. Optional – Soak a pinch of saffron strands in 2 tablespoons hot milk.     Step 3:    Heat ghee or oil in heavy bottom pot or pressure cooker.
