Oil Cake (Athirasa)

  Oil Cake (Athirasa) Ingredients: Raw Red Rice - 2 Cups Grated Jaggery - 1 1/2 Cups Poppy Seeds - 2 Teaspoons Cooking Oil - 3 Teaspoons Oil for Frying - 1 Cup Nutmeg Powder - 1 Teaspoon Instructions: Step 1: Wash the rice 4-5 times until the color of washed water changes from red to colorless. Step 2: Soak the rice overnight. Drain the water and shade dry for 45 minutes and take care that little water content remains in the rice. Step 3: Powder the rice into fine flour in the mixture and sieve the flour and repeat the step until all the rice is done into fine flour. Step 4: Take grated jaggery into thick pan, pour in little water, and prepare syrup of single thread consistency. Remove from flame, now pour in the powdered rice flour into the syrup, add the poppy seeds, nutmeg powder with continuous stirring. Step 5: Add the cooking oil. BLONDIES Ingredients : Unsalted Butter - 1 Cup (Melted) Brown Sugar - 2 Cups Eggs - 2 Vanilla Extract - 1 Teaspoon All-Purpose Flour - 2 Cups Baking Powder - 1/2 teaspoon Salt - 1/2 teaspoon White Chocolate Chips - 1 Cup (or your choice of mix-ins like nuts or butterscotch chips) Instructions: Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. Step 2: In a mixing bowl, combine the melted butter and brown sugar. Stir until well mixed. Step 3: Add the eggs and vanilla extract and mix until the batter is smooth. Step 4: In a separate bowl, whisk together the flour, baking powder, and salt. Step 5: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. GULAB JAMUN  Ingredients: Milk Powder - 1 Cup All-Purpose Flour - 1/4 Cup Ghee - 1/4 Cup Baking Soda - A Pinch Milk - 1/4 Cup Oil or Ghee (For Frying) For the Sugar Syrup: Sugar - 1 Cup Water - 1 Cup Cardamom Powder - 1/2 Teaspoon  A Few Saffron Strands (Optional)  Instructions: Step 1: In a mixing bowl, combine the milk powder, flour, ghee and a pinch of baking soda. Mix them well. Step 2: Add the milk gradually and kneed the mixture into a smooth, soft dough. You can add a little more milk if needed. Step 3: Divide the dough into small, equal-sized portions and roll them into smooth balls. Make sure there are no cracks in the balls. Step 4: Heat oil or ghee in a pan for frying over medium heat. Once the oil is hot, reduce the heat to low-medium and carefully add the dough balls. Step 5:  Fry the dough balls on low-medium heat, stirring occasionally, until they turn golden brown. COCONUT  SNOWBALLS Ingredients: Sweetened Shredded Coconut - 3 Cups Sweetened Condensed Milk - 1/2 Cup Vanilla Extract - 1 Teaspoon Salt -1/8 Teaspoon Semi-Sweet Chocolate Chips - 1 Cup (Optional, For dipping) Vegetable Shortening - 1 Tablespoon (If dipping in chocolate) Additional Shredded Coconut - For Filling Instructions: Step 1: Preheat your oven to 160 Celsius degrees. Line a baking sheet with parchment paper. Step 2: In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract and salt. Mix until well combined. Step 3: Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet.  Step 4: Bake for 15-20 minutes, or until the coconut turns golden brown. Apple Pie Ingredients:  Apples - 8 small granny smith apples or as needed Unsalted Butter - 1/2 Cup All-purpose flour - 3 Tablespoon White Sugar - 1/2 Cup Brown Sugar - 1/2 Cup Water - 1/4 Cup Double-Crust Pie Pastry Thawed - 1 (9 inch) Instructions: Step 1: Peel and core apples, then thinly slice. Set aside. Step 2: Preheat the oven to 425 degrees F (220 degrees C). Step 3: Melt butter in a saucepan over medium heat. Add flour and stir to form a paste; cook until fragrant, about 1 to 2 minutes. Add both sugars and water; bring to a boil. Reduce  the heat to low and simmer for 3 to 5 minutes. Remove from the heat. Step 4: Press one pastry into the bottom and up the sides of a 9-inch pie pan. Roll out remaining pastry so it will overhang the pie by about 1/2 inch. Cut pastry into eight 1-inch strips.
