Coconut Snowballs
COCONUT SNOWBALLS |
Ingredients:
- Sweetened Shredded Coconut - 3 Cups
- Sweetened Condensed Milk - 1/2 Cup
- Vanilla Extract - 1 Teaspoon
- Salt -1/8 Teaspoon
- Semi-Sweet Chocolate Chips - 1 Cup (Optional, For dipping)
- Vegetable Shortening - 1 Tablespoon (If dipping in chocolate)
- Additional Shredded Coconut - For Filling
Instructions:
Step 1:Preheat your oven to 160 Celsius degrees. Line a baking sheet with parchment paper.
Step 2:
In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract and salt. Mix until well combined.
Step 3:
Using a cookie scoop or your hands, form the mixture into small balls and place them on the prepared baking sheet.
Step 4:
Bake for 15-20 minutes, or until the coconut turns golden brown. Keep an eye on them to prevent burning.
Step 5:
Remove the coconut balls from the oven and allow them to cool on the baking sheet.
Step 6:
If you want to dip them in chocolate, melt the chocolate chips and vegetable shortening together in the microwave or in the stovetop. Dip the cooled coconut balls in the melted chocolate and place them back on the parchment paper.
Step 7:
Sprinkle additional shredded coconut on top of the chocolate-coated balls while the chocolate is still wet.
Step 8:
Let the chocolate set by placing the baking sheet in the refrigerator for about 15-20 minutes.
Step 9:
Once the chocolate has hardened, your coconut snowballs are ready to enjoy!
