Cornmeal Muffins
CORNMEAL MUFFINS
Ingredients:
- Cornmeal - 1 Cup
- All-Purpose Flour - 1 Cup
- Brown Sugar - 1/2 Cup
- Baking Powder - 1/2 Teaspoon
- Salt - 1/2 Teaspoon
- Milk - 1 Cup
- Vegetable Oil - 1/4 Cup
- Egg - 1
Instructions:
Step 1:
Preheat your oven into 180 degrees Celsius and grease an 8-inch square baking dish or a similar-sized skillet.
Step 2:
In a mixing bowl, combine the cornmeal, flour, sugar, baking powder and salt.
Step 3:
In a separate bowl, whisk together the milk, vegetable oil and egg.
Step 4:
Pour the wet ingredients into the dry ingredients and stir until just combined. Don't over mix; a few lumps are okay.
Step 5:
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Step 6:
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
Step 7:
Allow the muffins to cool for a few minutes in the muffin tin before transferring them to a wire rack to cool completely.
